Vegetable Tomato Pie

Tomato Pie

1 (1 lb. 4 oz) can diced tomatoes
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
1/2 cup sugar
2 tablespoons cornstarch
2 tablespoons butter
2 tablespoons vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon basil
1 cup Socialables® crackers, coarsley crushed
1 cup potato chips, coarsley crushed

Preheat oven to 350° F.

Saute vegetables in butter; add tomatoes and sugar.

Mix cornstarch and vinegar together and add to hot veggie mixture. Sprinkle with a mixture of crackers and chips.

Pour into buttered 7x11 casserole dish and bake about 30 minutes.
