The Broccoli Thing

1 can cream of mushroom soup
1 Cup mayonnaise
1 large onion, chopped
1 1/2 C grated cheddar cheese
3 eggs, beaten
2 tsp. lemon juice
3 (10 oz.) packages frozen chopped broccoli, completely thawed and well drained, but not cooked.
Ritz Cracker crumbs or cheese cracker crumbs
a little butter or margarine


Mix soup, mayonnaise, onion, cheese, eggs and lemon juice together. Then add broccoli and mix very well. Put in buttered casserole. Top with generous layer of crumbs and dot with butter. Bake in 350 oven 35-45 minutes until bubbly and heated through.

Best if made the day before or early in the day and then re-heated. It will cut into squares more
easily. Serves about 10.
