Vegetable Irish Potato

Irish Potato Casserole

8-10 Med Potatoes, peeled
1 8oz. Pkg. cream cheese (softened)
1 8oz. carton sour cream
1/2 cup melted butter
1 clove minced garlic
2 tsp. salt
1/4 cup chives
Optional: Paprika and Parmesan Cheese

Cook potatoes in boiling water about 30 minutes or till tender. Drain potatoes and mash.

Beat cream cheese with mixer until smooth. Add potatoes and mix together. Beat in remaining ingredients until combined thoroughly. Spoon mixture into a lightly buttered 2Qt. casserole dish.

Sprinkle with paprika and parmesan cheese. Cover and refrigerate overnite.

Remove from refrigerator 15 minutes before baking. Uncover and bake at 350 for 30 minutes. Yield 8-10 servings.
