Vegetable Corn and Spinach Parmesan

Corn and Spinach Parmesan

1/4 cup onion, minced
2 tbsps. butter or margarine
1 (15-16 oz.) can cream style corn
1 1/2 cups chopped fresh spinach OR frozen spinach, thawed and drained
1 teaspoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Topping:
1/4 cup fine bread crumbs
1 tbl. Parmesan cheese, grated
2 tbl. butter or margarine, melted


Preheat oven to 400 F.

Saute onion in butter. Combine corn, spinach, vinegar, salt and pepper, and sauteed onion. Turn into a lightly greased shallow baking dish. Combine topping ingredients and sprinkle over vegetable mixture.

Bake in hot oven at 400 degrees for 15 to 20 minutes or until bubbly and browned. Serves 5 to 6
