Tuna Casserole

1 T. olive oil
1 sliced yellow onion
2 T. flour
2 cups chicken stock
1/4 cup shredded jack cheese
1/4 cup shredded cheddar cheese
1/4 cup peas
1/2 cup corn kernels
1 - 16 oz. can drained tuna
1/4 cup seasoned bread crumbs
1 cup cooked lasagna noodles - cut 2" pieces

In a large sauté pan heat the olive oil. Add the onion and sauté until tender and golden. Add the flour and stir well.
Pour in the chicken stock and stir to combine.

Remove pan from heat and pour mixture into a mixing bowl. Add the cheese, peas, corn kernels, tuna, bread crumbs, and cut lasagna noodles.

Toss to combine. Place mixture into a 2 quart casserole dish. Bake at 350 degrees for 45 minutes.
