Macaroni Casserole 
(from Southern Living magazine) 
2 qts water 
1 teaspoon salt 
1 (8-oz.) package of uncooked elbow macaroni 
1 (10 3/4 oz) can condensed cream of mushroom soup 
1 cup mayonnaise 
8-oz. shredded sharp cheddar cheese 
1 (4-oz) can sliced mushrooms, drained 
3/4 cup bread crumbs or crushed Ritz crackers 
1 tablespoon of melted butter or margarine 
Preheat oven to 300 degrees F.
Bring water and salt to boil in large pot; stir in macaroni. Return to rapid boil and cook 8-10 minutes until tender; drain. 
Heat undiluted soup in a skillet over low-medium heat; stir in cheddar cheese. Stir until cheese is melted. 
Add mushrooms, mayonnaise and macaroni; spoon into a lightly-greased casserole dish. 
Combine crumbs or crushed crackers with melted butter; sprinkle evenly over macaroni mixture. 
Bake at 300 degrees for 20 minutes or until heated through. 
Makes 6-8 servings.
