Mexican Sagebrush Inn Enchilada Casserole

From the Sagebrush Inn in Taos, New Mexico.

Enchilada Casserole

1 lb ground beef
2 tbsp shortening
2 tbsp chili powder
6 tbsp flour
salt and pepper to taste
1 qt water
12 corn tortillas
1 1/2 c chopped onion
1 1/2 c grated longhorn cheese

Braise ground beef in shortening. Add chili, flour and other seasonings. Cook 5 more minutes. Add wawter and bring to
a boil. Cook 8 to 10 min. Dip tortillas in hot deep fat. Build up alternate layers of tortillas, onion, cheese and chili in an 8inch deep casserole. Bake at 375 for 20 to 25 min. until bubbly. 6 servings.
