Mexican Chili Rice

Chili Rice Casserole

1 pint canned tomatoes (or 1 can stewed tomatoes)
1 can red beans
1 c. minute rice
1 lb. hamburger
1/2 large onion, chopped
1 can tomato soup
chili powder
1 can tomato sauce

Put tomatoes, beans, soup and onion in crock pot on low heat. Soak rice in 1-1/2 c. hot water. Let sit until water is almost completely absorbed. Dump into crock pot. Add can of tomato sauce. Brown hamburger, salt and pepper lightly.

Add to crock pot. Add chili powder to taste. Cook on low heat for several hours or on high for a couple of hours. The longer it cooks the better it tastes. If it seems too thick add more tomato sauce, stewed tomatoes or tomato juice.

NOTE: You can make this in the morning and let cook all day on low. It will be ready when you get home from work!

Serve with bread or rolls.
