Lamb Chop Casserole

3 Shoulder Lamb Chops
1 Teaspoon Salt
1/8 Teaspoon Pepper
3 Tablespoons Onion -- minced
1 Cup Rice
4 Cubes Beef Bouillon
1 1/2 Cups Water
2 Cups Tomatoes – canned

Preheat oven to 350 degrees F.

Trim a piece of fat from chops. In skillet over low heat, heat piece of fat, then remove (add a little oil if needed). Saute chops in melted fat, sprinkling with salt and pepper. When chops are browned, but not done, cut each into 2 or 3 pieces.

Pour off all but 1/4 cup fat. Saute onion about 5 minutes. Stir in rice; then put over chops. Add bouillon to water and pour over. Add tomatoes. Cover and bake at 350 degrees for 1 hour.
