Italian Cheese and Ham Pie
1 (16 ounce) carton cottage cheese
1 (15 or 16 ounce) carton ricotta cheese
2 cups diced cooked ham
2/3 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 packages pie crust mix or pie crust sticks for 4 crusts
1 egg yolk, beaten
In a medium bowl mix well the first 8 ingredients. Preheat oven to 375 degrees.
In a large bowl prepare pie crust as package directs, making up both packages at once. Shape 2/3 of the pastry into a large ball and shape the remaining 1/3 into a smaller ball. On a lightly floured surface, roll the large ball into a 16 inch circle. Fold circle into fourths and carefully lift into a 10 inch springform pan.
Lightly press into bottom and sides of pan. Trim edges even with rim of pan and brush pastry with egg yolk.
Spoon cheese mixture into pan and fold edges of pastry over filling; then brush edges with egg yolk.
Roll remaining pastry into a 10 inch circle and place over filling in pan, pressing lightly around edges to seal. Brush top with egg yolk.
Bake pie 1 hour or until a knife inserted in the center comes out clean. Cool pie in refrigerator. Serve chilled. Serve 8 - 10.
