Marshmallow Cream Divinity

2 cups sugar
1/2 cup water
1/8 tsp. salt
1 pt. marshmallow cream
1 tsp. vanilla
1 cup chopped pecans or 1 cup coconut or chopped maraschino cherries


Boil sugar, water and salt in saucepan until mixture forms a hard ball in cold water (or 252 degrees on candy thermometer). Place marshmallow cream in large bowl. Stir in hot syrup very slowly. Continue stirring until slightly stiff. Add vanilla and nuts. Drop by spoons on wax paper.




Divinity
2 cups sugar
pinch of salt
1/2 cup nuts or fruits
1/2 cup water
1 pt. marshmallow cream
1 tsp. vanilla


Boil sugar, water and salt until mixture forms a hard ball in cold water. Place marshmallow cream in mixer bowl and stir in hot syrup. Continue stirring until slightly stiff. Fold in nuts and vanilla. Drop from spoon onto wax paper.



Can’t Fail Divinity

2 cups sugar
1/2 cup water
1/4 tsp. salt
1 tsp. vanilla
1 cup pecans
1 (7 oz.) jar marshmallow cream


Cook sugar, water and salt until it forms a soft ball when dropped in cool water. Remove from heat. Add vanilla and marshmallow cream. Beat until it begins to thicken. Add pecans and mix with spoon. Spoon out and let set.

Caution: Don't let it get too thick before you add the pecans and spoon out or it will harden in the mixing bowl.




Easy Divinity Candy

1 jar marshmallow cream
2 cups sugar
1/2 cup water
dash of salt
1 tsp. vanilla
1 cup chopped nuts


Put marshmallow cream in a bowl and set aside. Mix sugar, water and salt. Bring to a boil and boil hard for 2 1/2 minutes. Pour 1/3 of syrup into marshmallow cream and beat well. Pour another 1/3 and beat; again, add 1/3 and beat. Add vanilla and chopped nuts. Beat about 3 minutes. Put on waxed paper by spoonfuls immediately, as it gets hard very fast.
