Maple Pecan Pumpkin Cheesecake

Crust:
1 3/4 cups pecan shortbread cookie crumbs
4 tsp. melted butter
1/2 cup chopped pecans

Filling:
3 (8 oz.) cream cheese, softened
1 1/4 cups packed brown sugar
16 oz. can solid pumpkin
2 eggs
2/3 cup evaporated milk
2 tbl. cornstarch
1/2 tsp. cinnamon
1/4 tsp. maple flavoring

Topping:
1/2 cup chopped pecans
1/4 cup packed brown sugar
2 tbl. butter
1/4 tsp. maple flavoring


Preheat oven to 350 degrees F.

For the crust, mix crumbs and butter. Press on bottom and 1 inch up side of a 9-inch springform pan. Sprinkle with pecans. Bake at 350 for 6-8 minutes. Do not let brown. Remove and cool.

For filling, beat cream cheese and brown sugar until creamy. Add rest of the filling ingredients and beat well. Pour over crust. Bake at 350 for 55 minutes or until sides are set.

Combine topping ingredients. Sprinkle over top of cheesecake. Bake an additional 5-10 minutes, or until top is bubbly.
