Whole Grain Pumpkin Bread

1/2 cup vegetable oil
1/2 cup applesauce
1 cup brown sugar
1/2 cup honey (or molasses for a stronger flavor)
2 eggs
16 oz. can pumpkin
2 cups flour
1 cup whole wheat flour
1/2 cup millers bran
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 cup chopped nuts
raisins if wanted

Preheat oven to 375 degrees F.

Combine oil, applesauce. brown sugar, honey, eggs, and pumpkin, stir well. Add dry ingredients and mix well. Add nuts (and raisins if you want). Pour into two well greased bread pans and bake one hour in a 375 oven. I also bake in a 13 x 9 pan and have more of a snack cake. Cool a few minutes before removing from pan.
