Rhubarb Bread (makes 2 loafs)

1 cup brown sugar
1/2 cup white sugar
2/3 cupveg. oil
2 eggs
1 cup milk
1 tsp. salt
2 1/2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 cups diced fresh rhubarb stalks
1 cup chopped walnuts (optional)

Mix all ingredients together well. Pour into 2 greased 9X5 loaf pans and cook at 350 degrees for about one hour or until cake tester comes out clean.

Rhubarb Bread

1 1/2 cups Diced rhubarb stalks
1 cup Sugar
3/4 cup Butter
1 cup Brown sugar
4 eggs
2 1/2 cup All-purpose flour
1 tsp. Baking soda
1 tsp. Baking powder
1 cup Milk
1 tsp. Vinegar
1 tsp. Vanilla extract
1 cup Chopped nuts

Preheat oven to 325 degrees F.

Sprinkle the sugar over the rhubarb; set aside. Cream the butter with the brown sugar and beat in the eggs until mixture is light and fluffy.

Mix the flour with the baking soda and baking powder; set aside. Add vinegar to milk and let stand for 10 minutes; set aside.

Add flour and milk, alternately, to the egg mixture. Stir in vanilla, nuts and rhubarb. Pour into two greased 9 x 5 x 3" loaf pans. Bake for 45 to 60 minutes. Turn out on a rack to cool.

2/3 cup Oil
1 Egg
1 cup Buttermilk
1 tsp. Vanilla
1 tsp. Baking soda
2 1/2 cups Flour
1 tsp. Salt
1 tsp. Cinnamon
1 1/2 cups Diced rhubarb stalks
1/2 cup Chopped nuts; optional

1/2 cup Sugar
1 tbs. Butter; melted
1 tsp. Cinnamon

Preheat oven to 350. Grease and flour 2 loaf pans.

Beat brown sugar, oil and egg. Stir in buttermilk, vanilla and baking soda; mix well.

Mix flour, salt and cinnamon; mix into wet ingredients. Fold in rhubarb and nuts, if using. Pour into pans.

Combine topping ingredients; sprinkle over top of loaves. Bake until bread tests done, about an hour.
