Eggnog Quick Bread

2 eggs
1 cup dairy eggnog (not canned)
2 teaspoons rum extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter or margarine
1 teaspoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon ground nutmeg


1. Preheat oven to 350 degrees. Grease bottom only of 9 x 5 inch loaf pan.

2. Beat eggs in large bowl. Add sugar, eggnog, butter, rum extract and vanilla; blend well.

3. Lightly spoon flour into measuring cup, level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened.

4. Pour into greased pan. Bake for 40 minutes to 1 hour or until cake tester inserted in center comes out clean. Cool for 10 minutes. Remove from pan. Cool completely.

Wrap tightly and store in the refrigerator.
