Sweet Bread Butternut Squash w Pineapple Topping

BUTTERNUT SQUASH BREAD (With Pineapple Topping)

1 c. sugar
1 c. oil
4 eggs
2/3 c. water
2 c. cooked, mashed butternut squash
3 1/2 c. flour
2 tsp. soda
1-1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 c. nuts, chopped
2 c. whipped cream
1 c. drained, crushed pineapple

Preheat oven to 350.

Beat sugar, oil, eggs, water and butternut squash together.

Sift dry ingredients together; beat into egg mixture. Stir in nuts.

Pour into two medium-sized well greased and floured loaf pans.

Bake for l hour or until tested with a toothpick and it comes out clean when inserted in the center.

Let cool; turn out of pans. Stir drained pineapple into whipped cream.

Serve each slice of bread with a spoon of the pineapple topping.
