Oyster Stuffing

Oyster Stuffing
(to stuff a 20 lb. bird)

2 to 2 1/2 loaves bread
4 (8 oz.) packages of oysters
butter
1 1/2 cups chopped onion
2 cups chopped celery
3 tsp. salt
4-5 tsp. poultry seasoning
1 tsp. pepper
chicken broth


The night before, cut bread up into cubes. Put into a large bowl or pan. To the bread add salt, pepper and poultry seasoning. Saute onion and celery in butter until soft. Add to bread. Mix well and let sit out overnight.

When ready to stuff turkey, cut up oysters into about 3 pieces each. Put the oysters and oyster liquor into bread and mix well. Here is where your judgment comes into play - is it moist enough with the oysters or does it need some chicken broth? Grab a couple of tablespoonsful in your hand. Squeeze firmly. If it holds together well. It should be fine. If it immediately crumbles apart, add some. You want it to be barely moist, not wet.
