Cheese Spoon Bread

1 Cup yellow or white cornmeal
1 tsp. salt
1 Tbsp. butter or margarine
3 eggs, separated
1 1/2 Cups shredded sharp Cheddar Cheese
1 Cup milk
1 tsp. baking powder
Pinch of cayenne


Preheat oven to 375 degrees F. Lightly grease a 2 qt. casserole.

Mix in medium bowl cornmeal and salt.

In medium pan, bring 2 Cups water and the butter to boil. Add to cornmeal mixture, stirring with a whisk.
Add cheese and stir until melted. Add milk; beat until smooth; cool.

In medium bowl, with mixer, beat egg whites until stiff peaks form.

Beat egg yolks in small bowl until thick and light. Fold whites, yolks, cayenne, and baking powder into cornmeal mixture until combined. Turn into prepared casserole.

Bake 55-60 min., or until puffed and golden. Serve hot, spooned from casserole, with butter.
