Scones (Currant)

Currant Scones

1 cup self-rising flour
1 pinch salt
1/8 cup butter
1/8 to 1/4 cup sugar
1/4 cup currants
1 egg
1/2 cup milk

Preheat oven to 400.

Sift flour and salt. Cut in the butter.

Add fruit and sugar. Mix with egg and milk.

Roll out to 1" thick. Cut into desired shape with a sharp knife, and place on a floured oven slide.

Glaze with either milk or beaten egg. Bake until scones are golden brown. (about 10 minutes)

The secret of really good scones is to keep everything as cold as possible while making them, and to handle the dough little as possible after mixing.
