Grandma Max's Potato Rolls

1 C mashed potatoes, warm
2/3 C shortening
2/3 C sugar
2 eggs
1 t salt
3 1/2 C flour
1 T yeast dissolved in 1 C warm water

Let yeast start to work, add the warm potatoes, shortening, sugar and salt. Stir in flour to make a stiff dough. Let the dough raise 1 hour then with floured hands pinch off bits of the dough to make cloverleaf rolls. Place in greased muffin tins, allow to raise 1 hour.

Bake at 400 degrees for 20 minutes.

This dough can be refrigerated after the first raising and rolls made from the cold dough, but let it raise again before baking.
