Muffins Upside Down Banana Pecan

1/2 cup packed light brown sugar
1/3 cup butter, softened
2/3 cup chopped pecans
2 cups all-purpose flour
1/2 cup sugar
1 Tblsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
2 eggs
1/2 cup vegetable oil
2 medium ripe bananas, mashed
1 tsp. vanilla extract

Preheat oven to 375 degrees F. Grease 14 muffin cups.

In a small bowl, combine brown sugar, butter, and pecans.

Place 1 Tblsp. of the nut mixture into prepared muffin cups; set aside. In medium bowl, combine flour, sugar, baking powder, cinnamon, and salt.

In small bowl, beat together eggs, oil, bananas, and vanilla. Stir oil mixture into flour mixture just until all ingredients are moistened. Fill prepared muffin cups 2/3 full with batter.

Bake 20 minutes or until tests done with wooden pick. Serve warm. To serve, invert muffins on plate.
