Ready Bake Bran Muffins

3 cups whole bran cereal
1 cup boiling water
2 eggs slightly beaten
2 cups buttermilk**
1/2 cup salad oil
1 cup raisins
2 1/2 teaspoons soda
1/2 teaspoon salt
1 cup sugar
2 1/2 cups flour

In a large bowl mix bran with boiling water. Set aside to cool, then add eggs, buttermilk, oil, and raisins and blend well. Stir together dry ingredients, then add to bran mix.

You can bake muffins now or refrigerate batter in a tightly covered container for as long as two weeks. Stir before using. Bake muffins in 425 degree oven for about 20 minutes.

** To make buttermilk out of regular milk: To 1 cup milk, add 1 Tablespoon white vinegar or 1 Tablespoon lemon juice. Let stand 5 minutes.
