Muffins (Key Lime)

Key Lime Muffins

2 cups flour
1 Tablespoon baking powder
1/2 tsp salt
1 cup sugar
1/3 cup milk
2 large eggs, lightly beaten
1/4 cup veggie oil
1 teaspoon grated lime rind
1/4 key lime juice

Preheat oven to 400.

Combine first 4 ingredients in a large bowl and make a well in center of mixture.

Combine milk and four remaining ingredients and add to dry ingredients; stirring until just moistened.

Spoon lightly into greased muffing pans, filling three fourths of the way full.

Bake until lightly browned. Remove from pans immedieately.
