Chocolate Bread Pudding Muffins

1 3/4 cups 1 percent milk
3 large egg whites or eggs, beaten
2/3 cup sugar
1 teaspoon vanilla
6 cups cinnamon swirl or egg bread, cut into 1/2-inch cubes
1/2 cup mini semisweet chocolate pieces

Preheat oven to 350 F.

In a medium bowl, combine milk, egg whites or eggs, sugar and vanilla; mix well. Stir in bread cubes and chocolate chips; mix well. Let stand at room temperature 10 minutes.

Spoon mixture into 12 paper-lined muffin cups. Bake for 30 minutes or until puffed and set. Serve warm, at room temperature or chilled. May be frozen for up to 1 month before serving. Makes 12 muffins.
