Crumpets
makes about 20

450g./1lb. plain flour
15g./1/2 oz. salt
15g./1/2 oz. fresh yeast
1 pint warm water
butter for greasing


Sift the flour and the salt. Mix the yeast with a few tbs. of water. Whisk 3/4 of the remaining water into the flour and then mix in the yeasty liquid. Cover and leave in a warm place to rise. If the consistency is very thick loosen with the remaining water and leave to stand for 8-10 minutes.

Warm a non-stick frying pan over a low heat. Grease some crumpet or small tartlet rings and rub the pan with butter. Place the rings in the pan, pour in the batter until half full.

Cook on a low heat until small holes start to appear and the top starts to dry. The base should now be golden and they can be turned over and cooked for another minute.
