Cornbread: Boston Market Corn Muffins

Boston Market Corn Muffins

1 c. flour
1 c. cornmeal
1/2 c. sugar
2 T. honey
1 T. baking powder
1 egg
1 c. cream (half and half)
1/2 tsp. salt
1/2 c. butter, softened-do not use margarine

Using a large mixing bowl, stir together all dry ingredients. Add butter and honey - mixing until slightly crumbling. Set aside this mixture. Using another mixing bowl, mix the cream and egg. Fold this mixture into your dry ingredients. Using greased muffin tins or mini loaf tins, spoon mixture into the tins. Make sure you fill the tins to the top.

Bake at 400F. for 20-25 minutes. The muffins will be a light color. Depending on the size of
the tins you use, this recipe will yield 8-9 muffins or 7-8 mini loaves.
