Cornbread: Blue Corn Bread

Blue Corn Bread

1/2 cup melted butter
1 cup blue cornmeal
1/4 cup whole wheat flour
3/4 cup unbleached white flour
2 tsp baking powder
1/2 tsp baking soda
1 egg
3/4 tsp salt
1 1/2 cups buttermilk

Preheat the oven to 425 degrees. Grease an 8 inch square pan.

Combine all the ingredients except the buttermilk in the bowl of a food processor and blend for about 3 seconds. Scrape down the sides of the bowl, add the buttermilk and blend for a further 5 seconds, again scraping down the sides of the bowl. Place mixture in prepared pan and bake for 30 minutes, or until center is firm and the edges draw away from the sides of pan. Do not overcook and dry out, or corn bread will be tough. Turn onto rack to cool. Use right away or cover fully with plastic wrap to preserve moisture.
