Brushcetta Kabobs

12 slices country bread 1/2 inch thick
3 T olive oil, extra virgin
8 oz mozzarella cheese, 1/4 inch thick slices
3 plum tomatoes, sliced into 1/4 inch thick slices
1/2 cup chopped basil, extra leaves for garnish
Salt and Pepper
16 wooden skewers, soaked in water

Preheat oven to 425.

Trim crust from bread and quarter slices. Brush all sides with olive oil and put on baking sheet in oven for 5 minutes so all sides are golden but not browned. Remove.

Make 16 stacks layering:
Salt and Pepper
Repeat ending with bread

Skewer stacks and put on baking sheet and drizzle with more olive oil. Bake or grill 10 15 minutes til golden brown and cheese is melted Garnish with more basil leaves an fresh parsley
