2-1/4 cups BISQUICK baking mix
2/3 cup milk
1/2 cup shredded sharp Cheddar, Swiss or Monterey Jack cheese

Preheat oven to 450 degees. Grease a cookie sheet.

In a large bowl, mix all ingredients until a soft dough forms; beat 30 seconds.

If dough is too sticky, gradually stir in enough baking mix (up to 1/4 cup) to make dough easy to handle.

Turn dough onto a surface that is well dusted with baking mix; gently roll to coat. Shape into ball; knead 10 times.

Roll 1/2" thick. Cut with a 2" cutter dipped in baking mix. Place on cookie sheet.

Bake 8-10 minutes or until golden brown.

Makes about 14 biscuits.
