Chinese Rice Soup (Chuk) 
Left over turkey bones 
6 qts water 
1 chung choi (preserved turnip) 
2 cups rice (washed and drained) 
2 stalks celery, cut in halves 
1 can (13 3/4 oz) chicken broth 
2 1/2 tsp salt 
1 tsp ajinomoto (msg) 
2 stalks green onion, chopped 
1 head lettuce, shredded 
In a large pot add turkey bones, chung choi.  celery.  and water.  Cook for 1 hour.  
Remove bones, chung choi and celery.  Debone meat.  
Strain stock and return to pot.  Add rice, salt, meat, and cook 1 1/2 hours.  Add chicken broth and cook for another 1/2 hour.  Add green onion, ajinomoto, and stir.  Turn heat off.  
Serve garnished with lettuce.  Serves 8 to 10.
