Asian Noodle and Chicken Salad

Amount Measure Ingredient -- Preparation Method

8 ounces Japanese udon noodles or linguine 
2 cups diced cooked chicken 
3/4 cup slivered red bell pepper -- 1/2" in length 
1/3 cup slivered green onions 
3 tablespoons chopped fresh cilantro 
3 tablespoons chopped fresh mint 
2 tablespoons toasted sesame seeds 
1/2 teaspoon salt 
Dressing:
1/4 cup rice vinegar 
3 tablespoons dark sesame oil 
2 tablespoons fresh lemon juice 
1 teaspoon minced fresh ginger 
1/2 teaspoon minced fresh garlic 
1/2 teaspoon salt 
1/8 teaspoon crushed red pepper flakes 
Cook pasta according to pkg directions. Drain and rinse with cold water.
 
In a large bowl, combine pasta, chicken, red peppers, green onion,
 cilantro, mint, sesame seeds and salt. 
Dressing:
In med. bowl, whisk together vinegar, sesame oil, lemon juice, ginger, 
garlic, salt and pepper fliakes.
 Pour over pasta mixture and toss well. Serve immediately or refrigerate
 until needed.
