8 slices bacon
1/4 cup diagonally sliced green onions
1/4 cup green pepper, cut into strips
2 T chopped parsley
3 C. cold, cooked rice
2 eggs, beaten
2 T soy sauce
1/8 tsp. pepper
In 10 in skillet over med. heat, fry bacon until crisp. Remove to paper towels to drain, crumble and set aside.
Spoon off all but 2 T of the drippings
In bacon drippings, cook onions, green peppers and parsley until tender crisp. Stir in rice, soy and pepper. Heat through.
Make a well in the center of rice mixture, Pour beaten eggs in well. As eggs begin to set, stir lightly with fork so uncooked egg flows to bottom.
Cook until set but still moist. Gently stir to mix all ingredients in skillet. Stir in reserved bacon.
