Fried Rice

Have all of the ingredients prepared for cooking before hand, there will be no time for cutting or measuring, once you begin as all cooking must be done very quickly.

1 Tbs Oil
2 Lg Eggs (beaten)
3 Green Onions(cut diagonally)
2 Cups *Cooked Pork or Ham(diced)
4oz Can Sliced Mushrooms (drained)
1/2 Tsp Ground Ginger.
1 Pkg Oriental Rice Recipe (prepared in advance)
*NOTE: Any meat can be substituted for the pork/ham, cooked beef, chicken or seafood of your choice.

In a wok, heat oil over medium heat.

Add the beaten eggs and cook without stirring, about 2 minutes or until set.

Loosen eggs from pan and slide onto a plate.

Cut eggs into thin strips, set aside until later, keep warm.

In the oil remaining in the wok, saute' the onion until soft.

Add the meat, mushrooms, egg strips and ginger stir and fry until well heated.

To the pan add the prepared rice recipe, heat and stir over medium heat, until steaming.
