Lychee Frozen Pie
from "Cooking on Maui with Bonnie" By Bonnie Tuell

1 pt. (1/2 qt) vanilla ice cream
1 cup whipping cream
2 tablespoons sugar
1/4 teaspoon salt
1/2 cup chopped mango
1 cup sliced lychee

Cut ice cream in 1/2 in slices; lay on bottom of pie pan to cover. Cut remaining slices in half; arrange around the rim. With tip of spoon, smooth into a crust shape. Freeze until firm.

Whip cream, add sugar and salt; fold in mango and lychee. Freeze in ice cream shell.
