CHINESE FRIED RICE (with meat and eggs)

1/4 Cup Oil
3 Cups cold pre-cooked rice.
4 Green Onions or Scallions (minced).
3/4 Tsp Salt.
3/4 Cup Cooked Ham or Pork(diced or julienned).
3 Lg Eggs.
1 1/2 Tbs Soy Sauce.

Heat oil in a heavy skillet.

Add the pre-cooked rice, stir and cook until hot and golden.

Stir in the green onions or scallions, salt, and meat, stir and fry until hot.

Push the rice to the sides and hollow out the center in the rice.

Break the eggs into the hollow and scramble until semi-cooked, then blend into the rice mixture.

Sprinkle with soy sauce.
