Chile Noodles

1 pound soba noodles 
1 1/2 teaspoons crushed red pepper 
2 1/2 tablespoons minced fresh ginger 
2 tablespoons minced garlic 
1 large red onion, halved vertically -- thinly sliced 
3 medium zucchini -- cut in 1-1/2" strips 
3 medium yellow squash -- cut in 1-1/2" strips 
1/2 cup soy sauce 
3 1/2 tablespoons Chinese rice wine or sake 
2 1/2 tablespoons sugar 
3 tablespoons Chinese black vinegar or Worcestershire 
1 1/2 tablespoons safflower or corn oil 
2 1/2 tablespoons dark sesame oil 
1/4 cup minced fresh paesley 
Cook noodles in boiling water until just tender; rinse under warm water 
and drain.

In another bowl, place the onion, and in a third bowl, the squashes. Stir together the soy, rice wine, sugar and black vinegar. 
Heat wok or heavy skillet over high heat. Add safflower and sesame oil and 
heat about 30 sec. Add red pepper mixture and stir-fry until fragrant, 
about 15 sec. Add onion; stir-fry until slightly limp, about 1 min. 
Add squashes and stir-fry until barely tender, about 1-1/2 min. Add soy 
dressing and noodles and toss lightly to coat. 
Add parsley and toss lightly. Transfer to a serving platter.
