Grilled Chicken Yakatori
1/2 cup sake or mirin
1/2 cup low sodium soy sauce or shoyu sauce
2 TBS fresh ginger, minced
3 TBS sugar
1/2 tsp ground black pepper
12 to 14 button mushrooms
1 1/2 pounds boneless, skinless chicken breast, pounded and cubed.
6 to 8 scallions, halved
Combine all ingredients except chicken and scallions in a mixing bowl and whisk well. Dip chicken in marinade.
Preheat grill until coals are gray to white. Thread chicken onto skewers, alternating with mushrooms.
When fire is ready, place skewers on grill and place scallions around edge. Baste chicken and scallions with marinade, turning and basting frequently. Grill for 8 to 10 minutes, until chicken is white in center Remove skewers and scallions to warm plates. Serve with steamed rice.
