Chicken Chow Mein

1/4 c. chopped onion 
1 can (4 oz.) mushroom stems and pieces, reserve liquid 
2 Tbsp. butter or margarine 
2 c. diagonally sliced celery 
1 can bean sprouts, drained 
3 Tbsp. soy sauce 
1 Tbsp. sugar 
1/2 tsp. salt 
2 Tbsp. cornstarch 
3 Tbsp. mushroom liquid 
1 1/2 c. cut up chicken or 
chow mein noodles 

Saute onions and mushrooms in butter in large skillet until onions are 

Add water or chicken broth to mushroom liquid (less the 3 tablespoons) to 
measure 1 1/2 cups. 

Stir into onion-mushroom mixture. Add celery, bean sprouts, soy sauce, 
sugar and salt. 

Heat to boiling. Reduce heat and simmer, uncovered, for 15 minutes. Blend 
cornstarch in 3 tablespoons mushroom liquid; add to vegetables. 

Cook, stirring constantly, until mixture thickens. 

Add chicken and heat thoroughly. 

Serve over hot chow mein noodles. Serves 4.
